Honey Walnut Shrimp

Ingredients

  • Shrimp
  • 1 pound shrimp cleaned and deveined (patted dry with paper towel)
  • 1 cup flour
  • 1 cup ice water
  • 1 egg
  • 1/2 cup oil for frying
  • Candied Walnuts
  • 1/2 cup walnut halves
  • 1 cup water
  • 2/3 cup sugar
  • Sauce
  • 1/2 cup mayo
  • 1/3 cup sweetened condensed milk
  • 1/4 cup honey
  • Squeeze of lemon optional
  • Coarse pepper

Method

  1. Whisk water and egg, then add flour. Keep cold by placing in a large bowl of ice.
  2. Heat oil in large skillet (350°F).
  3. In small pan, bring water and sugar to a boil. Add walnuts and boil for 2 minutes. Remove walnuts and dry on paper towel.
  4. Dip dry shrimp in batter.
  5. Cook 4-5 minutes until golden and crispy.
  6. Drain on paper towel.
  7. Combine sauce ingredients and microwave 30 seconds.
  8. Toss shrimp and walnuts in sauce.
  9. Serve over rice with scallions.m for garnish.
