Method
Whisk water and egg, then add flour. Keep cold by placing in a large bowl of ice.
Heat oil in large skillet (350°F).
In small pan, bring water and sugar to a boil. Add walnuts and boil for 2 minutes. Remove walnuts and dry on paper towel.
Dip dry shrimp in batter.
Cook 4-5 minutes until golden and crispy.
Drain on paper towel.
Combine sauce ingredients and microwave 30 seconds.
Toss shrimp and walnuts in sauce.
Serve over rice with scallions.m for garnish.
