Honey Walnut Shrimp
Ingredients
- Shrimp
- 1 pound shrimp cleaned and deveined (patted dry with paper towel)
- 1 cup flour
- 1 cup ice water
- 1 egg
- 1/2 cup oil for frying
- Candied Walnuts
- 1/2 cup walnut halves
- 1 cup water
- 2/3 cup sugar
- Sauce
- 1/2 cup mayo
- 1/3 cup sweetened condensed milk
- 1/4 cup honey
- Squeeze of lemon optional
- Coarse pepper
Method
- Whisk water and egg, then add flour. Keep cold by placing in a large bowl of ice.
- Heat oil in large skillet (350°F).
- In small pan, bring water and sugar to a boil. Add walnuts and boil for 2 minutes. Remove walnuts and dry on paper towel.
- Dip dry shrimp in batter.
- Cook 4-5 minutes until golden and crispy.
- Drain on paper towel.
- Combine sauce ingredients and microwave 30 seconds.
- Toss shrimp and walnuts in sauce.
- Serve over rice with scallions.m for garnish.
