Ingredients
Rotisserie chicken-pulledabout 3 cups
Olive oil
1small sweet oniondiced
1packet taco seasoning
1family size package yellow rice
1bag frozen sweet white corn
1can pinto beansdrained and rinsed
16ouncessour cream
1packet ranch seasoning
16ouncesshredded Mexican cheese blend
Lettuce
Salsa
Avocado
Jalapeños
Black olives
Method
Sauté onion in a nonstick pan with a drizzle of olive oil, over medium heat, until translucent. Add chicken to pan & break up if needed.
Add taco seasoning and water according to package directions.
Simmer 5 minutes. Remove from heat.
Cook rice according to package directions; stir in corn & drained beans.
Stir ranch into sour cream.
To assemble, add rice & chicken to bowl. Top with cheese & then add whatever your favorite taco toppings are along with ranch sour cream and a big handful of crushed Doritos.
Notes
You can also make these with ground taco meat (beef, turkey, pork) and you can any flavor of Dorito you like.
