Doritos Chicken Taco Rice Bowls

Ingredients

  • Rotisserie chicken-pulled about 3 cups
  • Olive oil
  • 1 small sweet onion diced
  • 1 packet taco seasoning
  • 1 family size package yellow rice
  • 1 bag frozen sweet white corn
  • 1 can pinto beans drained and rinsed
  • 16 ounces sour cream
  • 1 packet ranch seasoning
  • 16 ounces shredded Mexican cheese blend
  • Lettuce
  • Salsa
  • Avocado
  • Jalapeños
  • Black olives

Method

  1. Sauté onion in a nonstick pan with a drizzle of olive oil, over medium heat, until translucent. Add chicken to pan & break up if needed.
  2. Add taco seasoning and water according to package directions.
  3. Simmer 5 minutes. Remove from heat.
  4. Cook rice according to package directions; stir in corn & drained beans.
  5. Stir ranch into sour cream.
  6. To assemble, add rice & chicken to bowl. Top with cheese & then add whatever your favorite taco toppings are along with ranch sour cream and a big handful of crushed Doritos.

Notes

You can also make these with ground taco meat (beef, turkey, pork) and you can any flavor of Dorito you like.
