Doritos Chicken Taco Rice Bowls
Ingredients
- Rotisserie chicken-pulled about 3 cups
- Olive oil
- 1 small sweet onion diced
- 1 packet taco seasoning
- 1 family size package yellow rice
- 1 bag frozen sweet white corn
- 1 can pinto beans drained and rinsed
- 16 ounces sour cream
- 1 packet ranch seasoning
- 16 ounces shredded Mexican cheese blend
- Lettuce
- Salsa
- Avocado
- Jalapeños
- Black olives
Method
- Sauté onion in a nonstick pan with a drizzle of olive oil, over medium heat, until translucent. Add chicken to pan & break up if needed.
- Add taco seasoning and water according to package directions.
- Simmer 5 minutes. Remove from heat.
- Cook rice according to package directions; stir in corn & drained beans.
- Stir ranch into sour cream.
- To assemble, add rice & chicken to bowl. Top with cheese & then add whatever your favorite taco toppings are along with ranch sour cream and a big handful of crushed Doritos.
Notes
You can also make these with ground taco meat (beef, turkey, pork) and you can any flavor of Dorito you like.
