Diner Style Meatloaf Muffins

Classic meatloaf, made easy. These diner-style meatloaf muffins are juicy, perfectly portioned, and ready in about 30 minutes — best served over mashed potatoes with plenty of gravy.

Ingredients

  • 1 lb ground beef
  • 1/2 cup buttermilk
  • 1 egg
  • 2 slices bread torn
  • 1/3 cup chopped onion
  • 1 grated carrot
  • 1 stalk celery minced
  • 2 cloves garlic minced
  • 3/4 cup shredded cheddar
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 teaspoons fresh parsley plus extra for garnish
  • 2 packs brown gravy mix-prep as directed

Method

  1. Preheat oven to 350°F.
  2. Spray a muffin tin with nonstick spray.
  3. Mix all ingredients, being careful not to over mix.
  4. Divide mixture into muffin tin.
  5. Bake for 18 minutes then spoon 1 tablespoon gravy over each then bake an additional 5 minutes.
  6. Let muffins rest 5-10 minutes.
  7. Serve with extra gravy and mashed potatoes. Garnish with parsley.

Notes

You can use any type of milk in these. Buttermilk adds a nice tang—make it by adding a splash of vinegar to milk.
