Ingredients
1lbground beef
1/2cupbuttermilk
1egg
2slicesbreadtorn
1/3cupchopped onion
1grated carrot
1stalk celeryminced
2clovesgarlicminced
3/4cupshredded cheddar
1teaspoonWorcestershire sauce
1tablespoonDijon mustard
2teaspoonsfresh parsleyplus extra for garnish
2packs brown gravy mix-prep as directed
Method
Preheat oven to 350°F.
Spray a muffin tin with nonstick spray.
Mix all ingredients, being careful not to over mix.
Divide mixture into muffin tin.
Bake for 18 minutes then spoon 1 tablespoon gravy over each then bake an additional 5 minutes.
Let muffins rest 5-10 minutes.
Serve with extra gravy and mashed potatoes. Garnish with parsley.
Notes
You can use any type of milk in these. Buttermilk adds a nice tang—make it by adding a splash of vinegar to milk.
