Classic meatloaf, made easy. These diner-style meatloaf muffins are juicy, perfectly portioned, and ready in about 30 minutes — best served over mashed potatoes with plenty of gravy.


Diner Style Meatloaf Muffins
Ingredients
- 1 lb ground beef
- 1/2 cup buttermilk
- 1 egg
- 2 slices bread torn
- 1/3 cup chopped onion
- 1 grated carrot
- 1 stalk celery minced
- 2 cloves garlic minced
- 3/4 cup shredded cheddar
- 1 teaspoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 2 teaspoons fresh parsley plus extra for garnish
- 2 packs brown gravy mix-prep as directed
Method
- Preheat oven to 350°F.
- Spray a muffin tin with nonstick spray.
- Mix all ingredients, being careful not to over mix.
- Divide mixture into muffin tin.
- Bake for 18 minutes then spoon 1 tablespoon gravy over each then bake an additional 5 minutes.
- Let muffins rest 5-10 minutes.
- Serve with extra gravy and mashed potatoes. Garnish with parsley.
Notes
You can use any type of milk in these. Buttermilk adds a nice tang—make it by adding a splash of vinegar to milk.
