Cheesy Taco Hand Pies

Cheesy, crispy, hearty and simply delicious. These Taco Hand pies are definitely one of those recipes you’ll want to make over and over.

Ingredients

  • 3 large burrito size tortillas
  • 1 pound ground beef
  • 2 tablespoons butter—melted
  • 1 red onion-diced
  • 1/2 each red & green bell peppers-diced
  • 1 cup corn
  • 8 oz colby jack cheese shredded (reserve 1/2 cup for top)
  • 8 oz Italian blend shredded cheese reserve 1/2 cup for top
  • 2 tablespoons taco seasoning
  • 1 teaspoon each salt garlic powder, pepper
  • Fresh cilantro & sour cream for serving optional

Method

  1. Cook beef in a large skillet over medium heat-high heat. When about halfway done, add veggies and all but 1⁄2 cup of each cheese, along with seasonings. Once beef is cooked through, remove from heat.
  2. Preheat oven to 350.
  3. Cut tortillas in half.
  4. Place meat in center and fold into triangles.
  5. Place in greased dish (like a pie).
  6. Brush with butter.
  7. Sprinkle remaining cheese on top.
  8. Bake 20-25 minutes until crunchy.
  9. Top with cilantro & sour cream.
