Ingredients
3large burrito size tortillas
1poundground beef
2tablespoonsbutter—melted
1red onion-diced
1/2each red & green bell peppers-diced
1cupcorn
8ozcolby jack cheeseshredded (reserve 1/2 cup for top)
8ozItalian blend shredded cheesereserve 1/2 cup for top
2tablespoonstaco seasoning
1teaspooneach saltgarlic powder, pepper
Fresh cilantro & sour cream for servingoptional
Method
Cook beef in a large skillet over medium heat-high heat. When about halfway done, add veggies and all but 1⁄2 cup of each cheese, along with seasonings. Once beef is cooked through, remove from heat.
