Coconut Almond Crackle

Buttery caramel toffee coated cereal with toasted coconut & almonds with a few M&M's thrown in. What more could you want in a snack?

Ingredients

  • 1 cup 2 sticks butter
  • 1 cup sugar
  • 3/4 cup corn syrup
  • 2 teaspoons vanilla
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 5 cups Rice Chex
  • 2 cups Rice Krispies
  • 1 cup sliced almonds
  • 1 1/2 cups coconut toasted
  • 1 cup M&M's candies
  • sprinkles

Method

  1. Preheat oven to 350°F.
  2. Spread coconut out and place in preheated oven for 8-10 minutes or until toasted. Watch from 5 minutes on.
  3. Pour cereal, coconut, and almonds into a large bowl coated with spray.
  4. Add butter, sugar, and corn syrup to a small saucepan.
  5. Bring to a boil over medium heat. Boil 1 minute.
  6. Remove from heat and stir in salt, vanilla and baking soda.
  7. Pour syrup over cereal mixture and stir to coat evenly.
  8. Pour onto prepared sheet pan and bake 5 minutes, stir, then bake an additional 5 minutes.
  9. Remove from oven and sprinkle top with sprinkles and M&Ms, pat to make them stick.
  10. Cool completely, then break apart.

Notes

Line sheet tray with parchment unless using a Silpat silicone mat or Caraway pan.
