Method
Pound steaks to 1⁄4 inch then sprinkle with kosher salt and pepper.
Combine flour, cornstarch, baking powder, steak seasoning, onion and garlic powder, paprika, and thyme in a shallow bowl.
Whisk buttermilk and egg until smooth in another bowl.
Dredge steaks in flour mixture, then buttermilk, then flour again.
Heat oil in a deep skillet over medium-high heat.
Once hot, fry each steak 3-5 minutes per side until golden.
Place on paper towel-lined sheet tray to drain then hold in oven on a sheet tray with a wire rack.
Gravy Instructions
Melt butter in a pan.
Add flour and cook until golden brown.
Slowly whisk in milk until smooth.
Add salt, pepper, thyme, cayenne, paprika, and Tabasco.
Cook until thick.
Notes
Substitute milk with a splash of vinegar for buttermilk.
