By far, my most popular recipe, this Fancy Nancy Chicken Salad, a copycat recipe based off the original recipe from Chicken Salad Chick, is a crowd pleaser, for sure! With time-saving rotisserie chicken, creamy Duke’s mayo, apples & grapes for sweetness, and celery & pecans for crunch, it really is the best chicken salad out there. Fancy Nancy Chicken Salad
Ingredients
- 1 rotisserie chicken about 3-4 cups
- 2 cups Fuji apple
- 1 cups seedless red grapes
- ½ cup celery
- ⅓ cup pecans
- 1 cup Duke’s mayonnaise
- 2 teaspoons ranch seasoning
- Salt & pepper
Method
- Remove chicken from the bones & break into bite-sized pieces. Place in a large bowl.
- Chop apples into 1/2 inch pieces.
- Quarter the grapes.
- Finely mince the celery.
- Chop the pecans.
- Add apples, grapes, celery & pecans to bowl with chicken.
- Add mayo & seasonings.
- Serve on croissants, rolls or your favorite bread or in a bowl with crackers.
