By far, my most popular recipe, this Fancy Nancy Chicken Salad, a copycat recipe based off the original recipe from Chicken Salad Chick, is a crowd pleaser, for sure! With time-saving rotisserie chicken, creamy Duke’s mayo, apples & grapes for sweetness, and celery & pecans for crunch, it really is the best chicken salad out there. Fancy Nancy Chicken Salad

Ingredients

  • 1 rotisserie chicken about 3-4 cups
  • 2 cups Fuji apple
  • 1 cups seedless red grapes
  • ½ cup celery
  • cup pecans
  • 1 cup Duke’s mayonnaise
  • 2 teaspoons ranch seasoning
  • Salt & pepper

Method

  1. Remove chicken from the bones & break into bite-sized pieces. Place in a large bowl.
  2. Chop apples into 1/2 inch pieces.
  3. Quarter the grapes.
  4. Finely mince the celery.
  5. Chop the pecans.
  6. Add apples, grapes, celery & pecans to bowl with chicken.
  7. Add mayo & seasonings.
  8. Serve on croissants, rolls or your favorite bread or in a bowl with crackers.
