I doubled the bananas then forgot to double everything else and guess what? Best banana muffins ever!

One bowl. Double bananas. Extra delicious.

Double Banana Banana Muffins
Ingredients
- 6 very ripe bananas
- 2 cups flour
- 1 teaspoon each baking soda and baking powder
- 1/2 teaspoon salt
- 1 cup brown sugar packed
- 3/4 cup mayo full fat
- 2 teaspoon vanilla
- 1 egg
- 1 3/4 cup chocolate chips optional
- Raw sugar
Method
- Preheat oven to 350. Grease a 12 cup muffin tin or line with paper liners.
- Peel & smash bananas, then mix with mayo, sugars, egg, and vanilla.
- Add dry ingredients and mix until just combined.
- Fold in chocolate chips.
- Scoop into greased or paper-lined tins.
- Sprinkle with raw sugar.
- Bake 18 minutes or until a toothpick comes out clean.
