Chicken Fried Steak with Pepper Gravy
Ingredients
- 2 pounds thin beef round bottom steaks or cube steaks
- 1 1/2 cup flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 cup cornstarch
- 1 teaspoon Montreal steak seasoning
- 1 teaspoon each onion powder garlic powder & paprika
- Thyme a little fresh or 1/2 teaspoon dried
- 1 1/2 cups buttermilk
- 1 egg
- Oil for frying
- Kosher salt and pepper to taste
Pepper Gravy
- 1/2 cup butter
- 1/2 cup flour
- 2-2 1/2 cups milk
- Salt and pepper – 1 teaspoon each
- Fresh thyme or 1/2 teaspoon dried
- 1/4 teaspoon cayenne and paprika
- Splash of Tabasco
Method
- Pound steaks to 1⁄4 inch then sprinkle with kosher salt and pepper.
- Combine flour, cornstarch, baking powder, steak seasoning, onion and garlic powder, paprika, and thyme in a shallow bowl.
- Whisk buttermilk and egg until smooth in another bowl.
- Dredge steaks in flour mixture, then buttermilk, then flour again.
- Heat oil in a deep skillet over medium-high heat.
- Once hot, fry each steak 3-5 minutes per side until golden.
- Place on paper towel-lined sheet tray to drain then hold in oven on a sheet tray with a wire rack.
Gravy Instructions
- Melt butter in a pan.
- Add flour and cook until golden brown.
- Slowly whisk in milk until smooth.
- Add salt, pepper, thyme, cayenne, paprika, and Tabasco.
- Cook until thick.
