Ingredients

  • 1 rotisserie chicken chopped
  • 1/2 small red onion chopped
  • 2-3 scallions sliced (save some greens for garnish)
  • 1/3 cup celery finely diced
  • Zest and juice of 1 Naval orange
  • 2 tablespoons honey
  • 3/4 cup mayonnaise*
  • Salt and pepper
  • 1 tablespoon whole grain mustard
  • Fresh thyme
  • 1/2 teaspoon poppy seeds
  • 1/2 cup cashews/pecans toasted
  • 1/3 cup dried cranberries chopped
  • Ciabatta/croissants for serving

Method

  1. Remove chicken from bone then chop and add to a large bowl with onion, celery, and scallions.
  2. In a small bowl, whisk zest, juice, honey, mayo, salt/pepper, poppy seeds, and mustard until smooth.
  3. Add dressing to chicken mixture and stir until well combined.
  4. Fold in nuts and cranberries.
  5. Garnish with scallions.

Notes

If you’re not a fan of mayo, you can use plain Greek yogurt instead.
