One pan. Lots of happy bellies. This is a perfect weeknight dinner and can even be prepped ahead of time. It’s filling, healthy and simply delicious.


One Pan Chicken Sausage Gnocchi
Ingredients
- 1 package gnocchi
- 1/2 cup grape tomatoes halved
- 1/2 onion sliced
- 1 cup spinach chopped
- 12 ounce package chicken sausage
- 24 ounce jar pasta sauce
- 16 ounces ricotta cheese
- 1 egg
- 8 ounces whole milk mozzarella shredded
- 1/2 cup grated Parmesan
- 1 cup vegetable or chicken stock
- 2 teaspoons Italian seasoning
- Salt/pepper
Method
- Spray 9×13 pan with nonstick spray.
- Add pasta sauce, ricotta, egg, seasoning, and stir until no streaks of egg remain..
- Add pasta and vegetables with sausage and stock, stir.
- Add 1⁄2 of parmesan and mozzarella, stir.
- Cover with foil and bake for 35 minutes.
- Uncover and top with remaining cheese, bake for 5-10 minutes.
- Let it rest about 15 minutes.
