Ingredients

  • 1 package gnocchi
  • 1/2 cup grape tomatoes halved
  • 1/2 onion sliced
  • 1 cup spinach chopped
  • 12 ounce package chicken sausage
  • 24 ounce jar pasta sauce
  • 16 ounces ricotta cheese
  • 1 egg
  • 8 ounces whole milk mozzarella shredded
  • 1/2 cup grated Parmesan
  • 1 cup vegetable or chicken stock
  • 2 teaspoons Italian seasoning
  • Salt/pepper

Method

  1. Spray 9×13 pan with nonstick spray.
  2. Add pasta sauce, ricotta, egg, seasoning, and stir until no streaks of egg remain..
  3. Add pasta and vegetables with sausage and stock, stir.
  4. Add 1⁄2 of parmesan and mozzarella, stir.
  5. Cover with foil and bake for 35 minutes.
  6. Uncover and top with remaining cheese, bake for 5-10 minutes.
  7. Let it rest about 15 minutes.
