Slow Cooker Chuck Roast

Everyone loves a "set it and forget it" meal and this is probably one of, if not the best, slow cooker chuck roast I've ever made
Ingredients
- 3-4# chuck roast
- 4 brown gravy mix packets
- 3 T cornstarch
- 1 C brewed black coffee
- 8 oz. beef stock
- 1/2 C soy sauce
- 3 T Worcestershire sauce
- 8 cloves garlic
- 2 tsp black pepper
- 2 T olive oil
- 1 # baby carrots
- 2 stalks celery - sliced
- large sweet onion - wedged
- 1/2 # baby portobello mushrooms - sliced
Instructions
- Spray the inside of your slow cooker liner with nonstick cooking spray
- Whisk together brown gravy mix, corn starch, coffee, stock, soy sauce, Worcestershire sauce, garlic & black pepper - set aside
- Place olive oil in a large skillet over med-high heat. Season the beef w/salt & pepper on both sides. One the pan is HOT add the beef & sear on both sides
- Add beef to the slow cooker. Top w/veggies & pour over the gravy
- Slow cook on LOW for 8-10 hours or until the internal temp. of the beef is 145°
- Remove beef from the gravy & break up then stir back in to the gravy
- Serve alongside your favorite sides
